Mrs Ashley is a local native to Waynesville, North Carolina. Her love for food and cooking came about when she was just a wee one. From rummaging through her momma's kitchen and whipping up whatever she could get her hands on to, and from there working in a few small cafes and being a chef at a Bed and Breakfast, her passion for cooking grew stronger.

While vacationing with her husband Ben and daughter Lilly, they ate at a favorite food truck of theirs and the inspiration began. With dreams of opening up a small cafe, and having her daughter Lilly she knew she wanted to start sooner rather then later and with the help of a friend she found the big white truck and fell in love instantly.

So the work began. Writing up the menu was tricky, she knew she wanted to incorporate the concept of " Farm to Table" but for her it would be "Farm to Truck". Growing up in a small community she wanted to be able to support the local farmers and to serve the freshest ingredients. Homemade was always a word used in her household and that too was to be incorporated in this menu. So anything you find desirable you can guarantee it was grown here in Western North Carolina or made right here in the Belly Food Truck.

The truck was and has been a working progress. Through all the hardwork Mrs Ashleys dreams are coming true.
